Taco Tuesday is a staple at our house, but when we want to mix things up, these bowls are our top pick. They combine smoky chipotle turkey, fluffy lime rice, fresh homemade Pico de Gallo, and a double drizzle of cumin crema and warm queso.

💡Shopping tip: You may have leftover queso, sour cream, cheese, or chipotle sauce depending on the size of the packages you purchase. That's okay! They're great ingredients to have on hand for tacos, nachos, quesadillas, or another rice bowl.


Cooking Guide

1.Get the Jasmine Rice Simmering:

⏱️ 15–18 MINS | 🥣 Small Pot.

Add the jasmine rice, 1¼ cups water, and a healthy pinch of salt to a small saucepan. Bring everything to a rolling boil over medium-high heat, then snap a tight lid on top and drop the burner down to low.


Let it simmer untouched for 15 to 18 minutes until tender. Pull it off the heat and leave covered so it steams while you cook the rest.


2.Chop the Produce:

Give all your fresh produce a good rinse and pat dry.

  • Tomato & Onion: Chop both into neat, small ¼-inch dices.

  • Cilantro: Chop finely, leaves and stems included.

  • Lime: Grate off the outer zest, then cut the lime into four wedges.


3.Stir Up a Quick Pico de Gallo:

⏱️ 3 MINS | 🥣 Small Bowl.

In a small mixing bowl, toss together the diced Roma tomato, about a third of your chopped onion, and half of the fresh cilantro. Drizzle in a splash of olive oil, squeeze over the juice from two lime wedges, and season with salt and pepper to taste. Give it a gentle mix and set aside.


4.Brown the Chipotle Turkey:

⏱️ 6–8 MINS | 🍳 Large Skillet.

Coat the bottom of a wide skillet with olive oil over medium-high heat. Add the remaining diced onion with a pinch of salt and pepper, sautéing for 2 to 3 minutes until translucent and fragrant.


Add the ground turkey, whole can of chipotle sauce, garlic powder, and a bit more salt and pepper. Fry for 4 to 6 minutes, breaking the meat apart with a spatula until browned through. Drain any pool of liquid if needed, cover, and set off heat.


5.Whisk the Cumin Crema:

⏱️ 2 MINS | 🥣 Small Bowl.

In a small bowl or cup, stir together the sour cream and ½ tsp ground cumin. Add cold water 1 teaspoon at a time, whisking between additions, until the crema is thin enough to drizzle nicely. Taste and add a pinch of salt and pepper.


6.6. Fluff & Build Your Bowls:

⏱️ 2 MINS | 🍽️ Assembly.

Uncover the rice, fluff it up with a fork, and gently fold in the fresh lime zest.


Bowl Setup: Scoop a bed of lime rice into your bowls → Layer over the hot chipotle turkey → Top with shredded Mexican cheese and spoon over fresh Pico de Gallo → Drizzle generously with cumin crema and warm Pancho's White Queso → Finish with leftover cilantro and extra lime wedges!
